Zhoug is a marvelous Yemenite cilantro sauce that makes everything taste amazing. Eat it with flatbread, with eggs, with fish and meat and vegetables, etc. Here is Ottolenghi’s recipe:
ZHOUG
35g cilantro leaves
20g parsley leaves
2 green chilies
½ tsp ground cumin
¼ tsp ground cardamom
⅛ tsp sugar
¼ tsp salt
2 garlic cloves, crushed
3 tbsp olive oil
2 tbsp water
Put all the ingredients in a food processor and blitz to a smooth paste.
